What being on site every day actually means

Most refrigeration companies quote you a call-out fee and a drive time. We don’t have a drive time inside the markets, because we’re already here.

Over 22 years we’ve worked on most of the cool rooms in this complex. We know which units run on which refrigerant, which controllers are original and which have been swapped out, and which rooms run hot in summer before anyone’s called us about it.

The Sydney Markets complex holds roughly 735 businesses, most of them running some form of cold storage. It’s one of the largest concentrations of commercial refrigeration in Sydney, in one place. We’ve spent our working life inside it.

That means when something goes wrong, we’re not starting from zero. We already know the room.

Right now, we’re checking every probe in the markets

We’re currently going through the complex, room by room, checking and re-certifying temperature probes and swapping stickers over as we go.

The reason it matters isn’t accuracy for its own sake. The Department of Health and the council run unannounced inspections, and a probe that’s drifted is a probe that fails an audit, whether or not the room’s actually holding temperature properly.

We check every probe against a dedicated calibration instrument, recalibrated annually, worth over $5,000, stored in a case away from vibration, sunlight and moisture. Plenty of the market does this job with a $40 technician’s probe dunked in ice and water. Both put a sticker on the door. Only one of them tells you the truth.

If a probe is out by more than 2 degrees, it gets physically replaced, not offset. A small drift can be corrected with a computer offset. Past 2 degrees, offsetting it is a temporary patch on a fault, not a fix.

What a bad reading actually costs you

Most of the time a probe that’s slightly out doesn’t cost anyone anything. The times it does are worth knowing about.

The part most people don’t know about

Every controller has its own deadband, usually around 2 degrees either side of the set point, before it bothers to turn the compressor on or off. That’s normal. The problem is when it stacks with a probe that’s also out by 2 degrees. Put those together and a system can sit there not cooling until it hits 6 degrees, and stop again at 4. Nobody told you the room was running that loose. The controller was doing exactly what it was set to do.

For anyone holding meat

Every degree above the correct holding temperature takes a week off shelf life. A probe out by 2 degrees is two weeks of shelf life gone, on stock you’ve already paid for.

Temperature on their avocado shipments is tracked the whole way from New Zealand with in-transit data loggers. One delivery can run to 65 x 40-foot containers. If the cold chain slips anywhere along that run, they’re liable for the loss, and a single delivery can carry up to $5 million of stock.

More than a sticker

The same team checking your probe calibration also does the servicing, cool room cleaning, emergency repairs, installs and leak detection on the rest of your site. We’re dual-trade certified, refrigeration and electrical, so a calibration visit is usually the easiest time to get eyes on everything else while we’re already there.

We’re also in the process of buying our own scissor lift, landing September 2026. We’ve spent over $60,000 hiring one over the years for jobs that needed height, and that cost gets passed on somewhere in every quote that includes a lift hire. Owning it means it doesn’t have to be.

If you’ve already got our sticker, or you haven’t yet

If you’re already a customer

When we come around for the swap-over, we check your probe against the $5,000 instrument, replace it if it’s out by more than 2 degrees, and put the new sticker on. That’s the whole job.

If you haven’t used us yet

You’ve probably seen the sticker on someone else’s cool room in the markets, or heard the name from another vendor. Getting started is the same as it’s always been. You call, we come and have a look, and we tell you what it actually needs, not what’s easiest to sell.

We work on a 12-month calibration cycle as standard practice. That’s not a system you’re signed up to, it’s just how we run it. If you want to know when your probe’s next due, ask us.
